Baltasar del Alcázar (1530-1606), no publicó ni un solo poema en vida. Su curiosa obra la conocemos solo gracias a las copias de un único manuscrito, hoy perdido, que hizo el pintor también sevillano Francisco Pacheco. Este era, a la sazón suegro de Diego Velázquez y autor del único retrato que tenemos de tan entrañable bardo. Los temas que caracterizan la obra poética de Alcázar fueron un tanto triviales. Por esta razón, a menudo se le etiqueta injustamente al autor como «poeta menor». Compuso también poesía religiosa, pero gran parte de su producción literaria se inspiraba principalmente en temas cotidianos relacionados con los placeres terrenales. Tenía dos grandes pasiones: la buena mesa y las mujeres. Uno de sus más famosos poemas, «Preso de amores», comienza así:«Tres cosas me tienen preso de amores el corazón: la dulce Inés y el jamón y berenjenas con queso.»Por esta razón es conocido como «el poeta gastrónomo del Siglo de Oro». Estuvo muy influido por los poetas latinos Marcial y Horacio; de este último tradujo diversas obras al castellano. Destacan su Diálogo entre dos perrillos, Consejos a una viuda y Cercada está mi alma de contrarios. Baltasar de Alcázar fue uno de los grandes poetas españoles del Siglo de Oro. Nos dejó no solamente su ingenio y gracia, su humor y su ironía, sino también infinitas enseñanzas acerca de la construcción del verso y el poema.
