El Dr. Alvaro Ronco, dedicado desde 1993 a la epidemiología nutricional del cáncer, estudia el consumo de alimentos, nutrientes, grupos de alimentos y nutrientes, de patrones dietarios, y desde 2020 investiga el posible rol de la carga ácida/alcalina dietaria en el riesgo de desarrollar cáncer. Reconociendo un nicho de datos casi vacío, encabezó doce estudios epidemiológicos originales en Uruguay, mayormente publicaciones iniciales en el tema. Los artículos generaron una evidencia pequeña pero consistente: la carga ácida dietaria alta duplica, en promedio, el riesgo de desarrollar cáncer comparada con una baja carga ácida.
